Brewer John Kimmich insists on using the very best imported malts and domestic hops to brew our beers. The art of brewing, born of seasonal changes and an always fermenting imagination, is reflected in the changing nature of what we have available from our taps on any day.
There are, though, certain brews that have proven to be so popular that we always have them available and on tap for our guests to enjoy.
Cask Conditioned
A weekly release of naturally carbonated and dry-hopped ale that is hand-pulled from our basement brewery. This selection changes with the Vermont seasons and John’s inspiration, and is tapped every Friday at opening.
Lightweight
Our lightest beer, and our Bronze Medal Winner 2006 World Beer Cup. German pilsner malt and American hops give this brew a light, crisp finish. Made with the light beer drinker in mind. ABV: 4.33% IBU: 14
Donovan’s Red
Named after Donovan’s, a 19th century Irish restaurant in downtown Waterbury. This medium-bodied, red-colored ale has a nice hop flavor and aroma. ABV: 5.16% IBU: 28
Pappy’s Porter
This dark mahogany ale has agreat and delicious malt depth, yet is balanced with supple, energizing bitterness. The most traditional of our regular offerings. ABV: 4.8% IBU: 25
Holy Cow I.P.A.
For hops lovers – this bitter ale is pale colored and made with a blend of 6 different malts and 5 different hops. This ale is dry-hopped for extra flavor and aroma. ABV: 5.16% IBU: 85
